Walnut Coffee Cupcakes
These absolutely delicious cupcakes are full of walnut goodness! And a dash of coffee... They're simple to make, low in sugar and you can freeze them too!
Ingredients
100g butter, well softened
100g self-raising flour
2 large eggs
2 tsp instant coffee
80g blitzed walnuts
3 tblsp honey
3 tblsp brown sugar
1 tsp baking powder
For the topping
150g icing sugar
100g Philadelphia cheese
1tsp lemon juice
Method
STEP 1
Heat oven to 180C/fan. Blitz the walnuts in a food processor or blender until they are a fine crumble. Place paper cupcake cases in a 12-hole muffin tin.
STEP 2
Beat the butter, sugar, flour, baking powder, walnuts, eggs and coffee on high speed
until creamy. Spoon the mixture into the cases evenly, then
bake for approx. 15 mins until golden and springy in the middle to the
touch. Lift out carefully and cool on a
rack.
STEP 3
Beat together the topping ingredients until smooth.
Spread onto completely cold cupcakes. Enjoy!
